  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. Using a box grater or food processor, finely shred 1 cup of zucchini (about one medium zucchini). Place the shredded zucchini in a clean kitchen towel and squeeze out excess moisture.
  3. In a large bowl, whisk together 1 ¾ cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and ½ teaspoon salt.
  4. In a separate bowl, beat ½ cup softened unsalted butter, ½ cup granulated sugar, and ½ cup packed light brown sugar until light and fluffy, about 3 minutes.
  5. Beat in 1 large egg and 1 teaspoon pure vanilla extract until combined.
  6. Gradually add the dry mixture to the wet ingredients, mixing gently until just combined.
  7. Gently fold in the shredded zucchini and 1 cup semi-sweet chocolate chips until evenly distributed.
  8. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing about 2 inches apart.
  9. Bake for 10 to 12 minutes, or until edges are golden but centers still look soft.
  10. Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes
