Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the flour, baking powder, sea salt, and dried lavender buds until evenly combined.
  3. In a large bowl, cream the softened butter and granulated sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, vanilla extract, fresh lemon juice, and lemon zest until the mixture is vibrant and fresh smelling.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
  6. Using a tablespoon or small cookie scoop, drop rounded balls of dough onto the prepared baking sheet about 2 inches apart.
