  • 1 cup (200g) granulated sugar
  • ½ cup (120g) pumpkin puree, canned or fresh
  • 1 large egg, room temperature

  • ¼ cup granulated sugar mixed with 1 teaspoon ground cinnamon (for rolling and dusting)

Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. Whisk together dry ingredients: sift or whisk 2 ¾ cups all-purpose flour, 1 teaspoon baking soda, 2 teaspoons cream of tartar, ½ teaspoon salt, and 1 teaspoon ground cinnamon in a large bowl. Set aside.
  3. Cream butter and sugar: beat 1 cup softened unsalted butter with 1 cup granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add pumpkin, egg, and vanilla: beat in ½ cup pumpkin puree, 1 large egg, and 1 teaspoon vanilla extract until well combined.
  5. Combine wet and dry ingredients: gradually add the flour mixture to the wet ingredients, mixing on low speed or stirring gently until just combined. Do not overmix.
  6. Make the cinnamon sugar coating: mix ¼ cup granulated sugar with 1 teaspoon ground cinnamon in a small bowl.
  7. Shape and coat dough balls: using a 2-tablespoon cookie scoop or spoon, scoop dough balls and roll each in the cinnamon sugar mixture until fully coated. Place about 2 inches apart on prepared baking sheets.
