  • 12 cups popped popcorn (about 1/2 cup unpopped kernels, or one standard bag of microwave popcorn)
  • 1/2 cup unsalted butter (1 stick)
  • 1 package (10 ounces) marshmallows (about 40 regular marshmallows, or 4 cups mini marshmallows)
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1–2 tablespoons vegetable oil or coconut oil (for hands)
  • 1 bag candy eyeballs (about 60–80 pieces)
  • Optional: orange gel food coloring
  • Optional: black decorating gel

Instructions

  1. Pop the popcorn. Pop 12 cups of popcorn using stovetop kernels or microwave popcorn. Remove any unpopped kernels and place the popped popcorn in a large mixing bowl.
  2. Prepare your workstation. Line a large baking sheet with parchment paper or wax paper. Have candy eyeballs ready in a small bowl. Fill a small bowl with water and a drop of dish soap, and have paper towels handy.
  3. Melt the butter and brown sugar. In a large pot or Dutch oven, melt 1/2 cup unsalted butter over medium heat. Add 1/2 cup packed light brown sugar and stir until dissolved and bubbly, about 2-3 minutes.
  4. Add the marshmallows. Reduce heat to low and add the entire package of marshmallows. Stir constantly until completely melted and smooth, about 4-5 minutes.
  5. Add vanilla and salt. Remove pot from heat and stir in 1/2 teaspoon vanilla extract and 1/4 teaspoon salt. If using orange food coloring, add a few drops and stir until evenly distributed.
  6. Combine with popcorn. Pour the marshmallow mixture over the popcorn in the large bowl. Gently fold together with a spatula until all popcorn is evenly coated.
  7. Cool slightly. Let the mixture sit for 2-3 minutes until cool enough to handle but still warm.
  8. Oil your hands. Rub a thin layer of vegetable oil or coconut oil all over your hands.
  9. Shape the balls. Grab a handful of the popcorn mixture (about the size of a tennis ball, roughly 1/2 cup) and gently press into a ball shape. Place on the prepared baking sheet. Repeat with remaining mixture to make 12-14 popcorn balls.
  10. Add the candy eyeballs. While the popcorn balls are still warm and slightly sticky, press 3-5 candy eyeballs into each one.
  11. Let them set. Allow the popcorn balls to cool completely at room temperature, about 15-20 minutes.
  12. Optional decorating. Use black decorating gel to draw mouths, spider legs, or stitches on the popcorn balls.

Notes

Work fast but don’t panic; the marshmallow mixture sets quickly. Humidity can make popcorn balls sticky; add an extra tablespoon of butter in humid weather. Don’t overmix to keep popcorn light and crispy. The soapy water trick (dip fingers in soapy water, rinse, then oil) prevents sticking. Test one ball first to check consistency. These taste even better the next day.
