This sticky honey garlic chicken thighs recipe is the kind of dinner that makes you look forward to cooking again. It’s simple enough for a Tuesday night, but impressive enough to serve to guests.

  • 6 to 8 bone-in, skin-on chicken thighs
  • 1/3 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 4 to 5 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (optional)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Salt and pepper to taste
  • 1 tablespoon olive oil or avocado oil
  • Optional garnishes: sliced green onions, sesame seeds, lime juice

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper. Let them sit at room temperature for about 10 minutes.
  2. In a small bowl, whisk together the honey, soy sauce, minced garlic, rice vinegar, and sesame oil. Set aside. In another small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Set aside.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Once the oil is shimmering, place the chicken thighs skin-side down in the pan. Cook without moving them for 5 to 6 minutes, until the skin is golden brown and crispy. Flip each thigh carefully and cook the other side for another 4 to 5 minutes.
  4. Pour the honey garlic sauce over the chicken. Reduce the heat to medium-low. Let it simmer gently for 5 to 7 minutes, spooning the sauce over the chicken as it cooks.
  5. Stir the cornstarch slurry and pour it into the pan. Stir gently to combine. Let it cook for another 1 to 2 minutes, until the sauce has thickened to a glossy, sticky glaze.
  6. Remove the pan from the heat. Let the chicken rest for about 5 minutes before serving. Sprinkle with sliced green onions and sesame seeds if desired.

Notes

Pat the chicken dry for crispy skin. Don’t overcrowd the pan. Keep heat at medium-low when adding sauce to prevent honey from burning. The chicken is done when internal temperature reaches 165°F (74°C) or juices run clear.
