  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 tub (16 oz) vanilla frosting
  • Green or purple gel food coloring
  • Candy eyeballs
  • Black gel icing
  • Pretzel sticks
  • Assorted candies (M&M’s, gummy worms, candy corn, etc.)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large mixing bowl, combine cake mix, melted butter, egg, and vanilla extract. Stir until a thick, cohesive dough forms (about 2-3 minutes).
  3. Press the dough evenly into the prepared pan, reaching all the way to the edges. The dough should be about 1/2 inch thick.
  4. Bake for 18-22 minutes, until edges are golden brown and center is just set. A toothpick inserted in the center should come out with a few moist crumbs.
  5. Let cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  6. While the cookie cake cools, mix the vanilla frosting with a few drops of green or purple gel food coloring until evenly colored.
  7. Once the cookie cake is completely cool, spread the colored frosting evenly over the top.
  8. Use black gel icing to draw a mouth, eyebrows, and other features. Press candy eyeballs, pretzel sticks, and assorted candies into the frosting to create a monster face.
  9. Refrigerate the decorated cookie cake for at least 15 minutes before serving to firm up the frosting.
