  • ¼ cup (30g) steamed or roasted sweet potato strips (optional)
  • 4 sheets of nori (seaweed paper)
  • Soy sauce or tamari, for dipping
  • Pickled ginger and wasabi (optional, for serving)

Instructions

  1. Cook the Rice: Rinse the sushi rice under cold water until the water runs clear (about 3-4 rinses). Add rice and water to a pot, bring to a boil, then cover and simmer on low for 15 minutes. Remove from heat and let it sit, covered, for 10 minutes. Fluff with a fork.
  2. Season the Rice: While the rice is still warm, mix the rice vinegar, sugar, and salt in a small bowl until dissolved. Gently fold this mixture into the rice using a slicing motion (don’t mash it). Fan the rice for a minute to cool it slightly.

  7. Roll It Up: Using the mat, lift the bottom edge of the nori over the filling. Tuck it in firmly with your fingers, then continue rolling, peeling back the mat as you go. Wet the bare strip of nori at the top with a finger to seal the roll. Apply gentle, even pressure.
  8. Slice and Serve: Using a sharp, damp knife, cut the roll into 6-8 pieces. Wipe the knife clean between cuts for neat slices. Arrange on a plate with soy sauce, pickled ginger, and wasabi if desired.
