  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 large eggs, room temperature
  • ½ cup (120ml) vegetable oil
  • ½ cup (120ml) milk, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 medium apples (about 300g total), peeled, cored, and diced into ½-inch pieces
  • ¼ cup (60ml) pure maple syrup
  • 2 tablespoons (28g) unsalted butter
  • ¾ cup (90g) powdered sugar
  • 2 tablespoons granulated sugar (for cinnamon-sugar layer)
  • 1 teaspoon ground cinnamon (for cinnamon-sugar layer)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly spray exposed sides with cooking spray.
  2. Peel, core, and dice apples into ½-inch pieces. Toss with 1 tablespoon of the measured flour to prevent sinking. Set aside.
  3. In a small bowl, mix 2 tablespoons granulated sugar with 1 teaspoon cinnamon for the cinnamon-sugar layer. Set aside.
  4. In a large bowl, whisk together flour, baking powder, salt, 1 teaspoon cinnamon, and nutmeg.
  5. In a separate large bowl, whisk together granulated sugar, brown sugar, eggs, vegetable oil, milk, and vanilla extract until smooth and slightly thickened.
  6. Pour wet ingredients into dry ingredients. Stir with a rubber spatula until just combined (a few streaks of flour are fine). Do not overmix.
  7. Fold in the flour-coated apple pieces gently until evenly distributed.
  8. Pour half the batter into the prepared pan and spread evenly. Sprinkle half the cinnamon-sugar mixture over the batter. Add remaining batter on top and spread carefully. Sprinkle remaining cinnamon-sugar on top. Gently swirl with a butter knife (2-3 figure-eight motions).
  9. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If top browns too quickly after 40 minutes, tent with foil.
  10. Cool in pan for 15 minutes, then lift out using parchment sling and transfer to a wire rack to cool completely.
  11. While bread cools, make glaze: In a small saucepan over medium heat, combine maple syrup and butter. Stir until butter melts and mixture is smooth. Remove from heat and whisk in powdered sugar until smooth. Let sit 2-3 minutes to thicken slightly.
  12. Pour glaze over cooled bread, letting it drip down sides. Let set 10-15 minutes before slicing.

Notes

Don’t skip flour-coating the apples to prevent sinking. Room temperature ingredients ensure a tender crumb. Let bread cool completely before glazing to achieve a crackly top. For best results, use a kitchen scale for flour.
