Cozy No-Bake S’mores Icebox Cake: Easy 10-Minute Dessert

This cozy no-bake s’mores icebox cake comes together in just 10 minutes of active prep time. Layers of creamy chocolate pudding, crunchy graham crackers, and fluffy marshmallow topping create a nostalgic, crowd-pleasing dessert that’s perfect for any occasion.

  • 3 cups whole milk (cold)
  • 1 (3.9 oz) package instant chocolate pudding mix
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (14.4 oz) box honey graham crackers
  • 1 (7 oz) jar marshmallow creme (Fluff)
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips (optional, for garnish)

Instructions

  1. Make the chocolate pudding base. In a large mixing bowl, whisk together the cold milk and instant chocolate pudding mix for about 2 minutes until it thickens. Set aside for 5 minutes to fully set.
  2. Whip the cream. In a separate medium bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer on medium-high speed, whip until soft peaks form—about 2-3 minutes.
  3. Fold it together. Gently fold the whipped cream into the chocolate pudding mixture using a spatula until just combined.
  4. Layer the graham crackers. Arrange a single layer of graham crackers in the bottom of your 9×13 inch baking dish, breaking some to fit tightly.
  5. Add the first chocolate layer. Spread half of the chocolate pudding mixture evenly over the graham crackers.
  6. Add the marshmallow creme. Gently warm the marshmallow creme in the microwave for about 10 seconds to make it spreadable. Dollop it over the chocolate layer and spread carefully.
  7. Repeat the layers. Add another layer of graham crackers on top of the marshmallow creme. Then spread the remaining chocolate pudding mixture over the top. Finish with a final layer of graham crackers.
  8. Top with marshmallows. Sprinkle the mini marshmallows evenly over the top layer of graham crackers. If desired, sprinkle chocolate chips over the marshmallows.
  9. Chill. Cover the dish with plastic wrap and refrigerate for at least 6 hours, but overnight is best.
  10. Toast the marshmallows (optional but amazing). Just before serving, remove the plastic wrap and place the dish under the broiler for 1-2 minutes until the marshmallows are golden brown and toasted. Alternatively, use a kitchen torch. Let it sit for 5 minutes before serving.

Notes

For best results, chill overnight. The graham crackers soften into a cake-like texture. Toast marshmallows just before serving. Can be made up to 2 days in advance. Freezes well for up to 3 months.
