These soft and tender pumpkin spice cookies are shaped like little witches’ hats with a chocolate kiss crown and orange sugar trim. They’re quick, easy, and perfect for Halloween parties or cozy fall afternoons.

  • ½ cup canned pumpkin puree (not pumpkin pie filling)
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • 1½ teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 24–30 chocolate kisses, unwrapped
  • 2–3 tablespoons orange sanding sugar
  • Powdered sugar, optional for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes. Scrape down the sides halfway through.
  3. Beat in the pumpkin puree, egg, and vanilla extract until well combined. The mixture may look slightly curdled.
  4. In a separate medium bowl, whisk together the flour, pumpkin pie spice, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or stirring with a spatula until just combined. Do not overmix.
  6. Using a cookie scoop or tablespoon, drop rounded scoops of dough onto the prepared baking sheets, spacing them about 2 inches apart. You should get about 24-30 cookies.
  7. Bake one sheet at a time for 10-12 minutes, or until the edges are set and lightly golden. The centers will still look soft.
  8. Immediately after removing from the oven, gently press a chocolate kiss into the center of each cookie, pointed side up, so it sits about halfway in.
  9. While the chocolate is still soft, sprinkle a pinch of orange sanding sugar around the base of each kiss.
  10. Let the cookies cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely. The chocolate will firm up as they cool.

Notes

Make sure your pumpkin puree isn’t watery—pour off any liquid before measuring. Keep chocolate kisses cold until ready to use. If your kitchen is warm, refrigerate the cookies for 10 minutes to help the chocolate set. The cookies taste even better the next day as the flavors meld.
